General Tsao-ish Veggie Stir Fry

- Leftover Pomegranate Juice (from Pomosas)

I made a General Tsao-ish sauce, based on what I've seen in restaurants and what I had for ingredients.
In a small sauce pan simmer a bit of olive oil, pomegranate juice, honey and garlic until it reduces by at least a quarter, better if by half.
While sauce is simmering, saute veggies. Add a touch of soy sauce to taste. (I added a bit more garlic, as well. After about 10 minutes add a handful of chopped smoked almonds.
When sauce is ready pour over veggies and turn heat off. Add torn basil and stir, coating all the veggies. Serve over rice. Garnish with smoked almonds.
(I also added a leftover Morningstar Chik'n Patty, diced, for some protein.)
