Day One: Veggie Nachos
- Leftover Tortilla Chips
- Leftover Braised White Beans
- Shredded Cheese of choice
- Leftover Kabobs, diced
- Leftover Salsa
- Tomatoes (in this case, also leftover from the party)
- Sour Cream (leftover from strawberry concoction)
Preheat oven to 350°.
Layer tortilla chips on oven proof plate. Dollop with leftover beans and sprinkle shredded cheese on top.
Dice kabob veggies of choice-- I chose the red bell pepper, onion, zucchini, mushrooms, pineapple and tomatoes (which may very well be all the veggie choices...). Dice fresh tomatoes. Spread veggies over chips.
Top with leftover salsa and sprinkle a little more cheese to taste.
Bake for 10 minutes or until cheese is nice and melty.
Top with a dollop of sour cream and serve with leftover beverages.
